4 1/2 cups flour
1 package yeast
1 1/2 cups water
2 teaspoons salt
1 tablespoon sugar
Mix yeast with water. Stir until completely dissolved. Sift flour with salt and sugar. Add flour to yeast mixture and work with hands just until completely mixed. Do not knead. Form into bowl, cover with oil. Leave in bowl and cover with damp towel. Raise until doubled.
Punch down dough, roll into oblong shape and roll up into 2 large or 4 smaller loaves. Place on cookie sheets and cut three diagonal slices in tops of loaves. Raise until doubled.
Bake at 425 degrees for 10 minutes; the reduce heat to 350 degrees for 50 minutes.
Serve hot with butter.
Keeps well in fridge in plastic bag or may be frozen for later use.
