Creamy Parmesan Salmon Fillet
1/2 cup mayonnaise
1 tsp garlic powder
1/4 cup grated parmesan cheese ( I like an asiago/romano/parmesan blend)
1 TBSP fresh chives, minced
1 TBSP fresh lemon juice
1 skin-on Salmon fillet, thawed
Preparation: (Cook from thawed)
1. Pre-heat oven to 400 degrees
2. In a small bowl combine all ingredients except the salmon and mix well.
3. Spread mayonnaise mixture over the top of the salmon, covering all the meat.
4. Place Salmon, skin side down, on a parchment lined baking sheet and cook for 20-25 minutes, or until the fish flakes with a fork and the topping is golden brown. Alternately the salmon can also be grilled, rule of thumb is 10 minutes per inch. (I much prefer it grilled!)
