Panko-Crusted Oven-Baked Chicken Thighs



8 boneless/skinless chicken thighs
2 eggs
4 TBSP lime juice
Cooking Spray
1-1/2 cups panko bread crumbsPreview
1 TBSP Grated Parmesan Cheese ( I like to use my favorite Asiago/Parmesan/Romana blend)
1 TBSP onion powder
1 TBSP garlic powder
2 tsp paprika
2 tsp black pepper
2 tsp oregano


Preheat oven to 375 degrees Fahrenheit.

Rinse chicken.

Spray a baking pan with the cooking spray.

Place chicken in a ziplock bag and add lime juice.  Beat the eggs until well blended, and add to the mixture.  Set aside. (Can also be marinated in refrigerator overnight)

In a large ziplock bag, combine all dry ingredients; panko, grated cheese, onion powder, garlic powder, paprika, pepper, & oregano.

Remove chicken from egg mixture, place in the ziplock bag with the dry ingredients, and turn a few times to coat the chicken.

Place the coated chicken in the baking pan, then lightly spray the coated chicken with some cooking spray.

Bake for 45 minutes.  Be careful not to overcook, as they may come out too dry.

Makes 4 servings – 2 thighs each.
